Spirulina is a blue-green microalga (a cyanobacterium, Arthrospira platensis) that grows naturally in the alkaline lakes of warm regions. It is one of the most nutrient-dense foods in the plant world: it contains 55 to 70% protein, iron, vitamin B12, beta-carotene, B vitamins and phycocyanin, the blue pigment that gives it its colour.
